Citi’s top Chefs share their favourite Christmas dishes and what they’ll be serving up this Festive Season!

Christmas is a crazy time in the kitchen for our top Citi Dining chefs but before the busy period is in full swing, we took five minutes to chat with them about their favourite Christmas recipes and memories.

From a traditional Aussie barbeque with all the trimmings, seasonal seafood to indulging in Italian feasts; our chefs are all about keeping the Christmas spirits flowing with delicious food to be shared with family and friends.

“Christmas is a time for sharing great times with family and friends. And what better way for us to do it than to share lots of delicious food. Two of my absolute favourite things to indulge in are scallops and a great piece of beef. Both go incredibly well on the BBQ, and let's face it, what’s better than Scallops with miso butter or Eye fillet with a great spicy dipping sauce, freshly grilled on the barby!”

When I was growing up, my mother would always cook the most beautiful tortellini dish for us to have on Christmas Day. Some of the best memories I have is sitting around the table with my family eating this dish which is why it is my absolute favourite.

“My favourite dish at Christmas has to be the Porchetta. We take free range pork bellies, roll and stuff them with herbs and cook for eight hours. The smell of them roasting in the oven just reminds me of Christmas and when they are served with bowls of roasted sides it just looks like the ultimate feasting dish to be shared with family and friends.”

“Back by popular demand again this year, we’re serving up our festive turkey and ham dumplings at Burma Lane. These come smothered in a cranberry sauce with an Asian twist, fried shallots and spring onion. These tasty steamed parcels are the perfect Christmas-y treat to get you in the festive spirit, delivered with a special Asian twist that is truly iconic to Burma Lane.”

Aqua Dining, Milsons Point

I am Italian, so it shouldn’t come as a big surprise that I am including some pasta dishes into this year’s Christmas Day menu. This year, one of the delicious pasta dishes we will be serving is Tagliolini with pipis, brocollini & black olives. I actually included this in one of our Saturday Night Viaggio Cullinario menu’s that changes week to week and it was a big hit, so we are bringing it back for our Christmas Day special menu for everyone to enjoy!

Jamie’s Italian, all Australian restaurants

“At Jamie's Italian Australia we will be having a 4 different Christmas set lunches throughout the Christmas period, starting on November 19th and running until December 31.

“At lunch times across all our venues we will replace our super lunch offer with a festive lunch offer which includes dishes such as a truffled flash steak, a smoked salmon pate and dark chocolate brownie for dessert.”

“In the evenings we have three set menus available priced at $55 and $75 per person, with some crowd favourite dishes such as the Jamie's Italian Porchetta or our Spatchcock Chicken - all set menus are three courses with our $75 menu including a glass of bubbles to start and digestif to finish. We’re also excited for the first time we also have a dedicated vegetarian Christmas menu!”
