Head Chef Davide Rebeccato, originally from Italy, travelled extensively before joining Aqua Dining. Coming from three generations of bakers, Davide grew up around cooking from a young age and has followed his passion around the globe.
Davide has a deep love and passion for Italian cuisine and while he’s very creative in the kitchen, he respects the traditions of Italian cooking and thrives to showcase the best of the classics.
We take 5 minutes to get to know Davide better:
Q: What is the ‘can’t miss’ foodie event in your calendar each year?
A. Before moving to Australia my favourite foodie event was Identitá Golose, an international cooking convention in Milan.
Q: How long have you been a chef and why did you decide to pursue this career?
A. My first experience as a chef was twenty years ago when I began as a commis chef. I decided to pursue this career since my parents used to run a restaurant and a bakery and that’s what I grew up around.
Q: Can you explain your food philosophy?
A. I like to experiment with new and modern techniques while still paying respect to the Italian traditions.
Q: If you weren’t a Chef, what would you be?
A. A baker
Q: What is your favourite ingredient?
A. Actually I have many favourite ingredients but that one I like most is extra virgin olive oil.
Q: What do you like to eat at home when nobody’s looking?
A. I love to make homemade soups like traditional minestrone.
Q: If you could invite any Chef for dinner, who would it be and why?
A. I would like to invite for dinner Massimo Bottura, the chef patron from Osteria Francescana in Modena, because right now he is the epitome of Italian cuisine.
Q: Sweet or savoury?
Q: What is the best piece of advice you could give to aspiring chefs?
A. The best piece of advice I can give to chefs is to be humble, to focus and to be patient.
