Steak and Shiraz Masterclass | Eastside Grill

Eastside Grill evokes the atmosphere of New York’s meatpacking district, delivering a menu touched by the distinctive flavour of the traditional Japanese Binchotan charcoal grill.

Join Head Chef Angie Ford (Porterhouse by Laris in Hong Kong) in a one hour Masterclass about Steak; how to choose it, how to cut it and most importantly how to cook it. After an hour of steak, Ivan Gasparini (Porterhouse by Laris in Hong Kong as well as Marco Pierre White in Dubai) will take you through a selection of his favourite Shiraz; different regions, different winemaking techniques and most importantly, wine matching pointers.

Head Sommelier Amanda Yallop will also join the conversation, describing how she approaches matching beverages with Peter’s food. BLACK Bar & Grill is set against the million-dollar backdrop that is Sydney Harbour. Dany Karam and team present a contemporary Australian grill where signature seafood dishes sit alongside grass and grain-fed beef, chosen specially for the wood-fired grills and rotisserie.

Celebrating Australia’s coastline | Bennelong

Join Executive Chef Peter Gilmore and Head Chef Rob Cockerill for a Saturday lunch celebrating the Australian Coastline. The four-course, beverage-matched lunch will feature some of Australia’s most unique seafood and native greens including the Coffin Bay fan shell razor clam exclusively served at Quay, Mooloolaba Yellow fin tuna and line-caught Northern Territory Red Emperor with coastal greens The chefs believe “Bennelong is all about the provenance of the food we are serving,” “The menu is very much crafted in partnership with the farmers, fishermen, breeders and providores with whom our chefs work every day. There is so much incredible food along our coastline that is native to Australia, it’s important to celebrate that and the people who bring it to us."

Basque inspired, fire-powered brunch | Firedoor

Head chef and owner Lennox Hastie goes back to the country that inspired his love of fire with a Basque inspired brunch. The fire-powered menu will feature dishes from the pintxos bars in Northern Spain with a Firedoor spin. Expect a menu made up of grilled peppers, jamon, wood baked eggs with chorizo, ash baked potato tortilla, hay smoked sardines on Firedoor’s famous bread and to finish, wood fired flan. A selection of brunch inspired drinks by Firedoor’s bar manager will be available including grilled tomato bloody marys, breakfast martinis and vermouths, the proper way to start a meal in San Sebastian.
